It’s gearing up to be salad season, and boy, do I love me a fresh salad. I used to buy the salads in bags, but after a few unfortunate experiences with them – some are not thoroughly washed and some rot out before I can even use it! – I decided it was time for me to make my own.
It was pasta night at our home and I wanted some fresh salad to go with it. I’ve become a fan of arugula lately and looked up some recipes to go with it. I didn’t have any lemon on me, but I had key limes leftover from the key lime pie I made (I’ll share that recipe later!)
So, here is my simple and oh-so-easy – arugula salad with olive oil, key limes, and parmigiano-reggiano cheese!
2 bunches arugula, washed, dried, and torn
1/4 cup extra-virgin olive oil
3-4 key limes, juiced. You can also use regular limes or lemons.
Salt and freshly ground black pepper
Parmigiano-Reggiano cheese, shredded.
Drizzle the arugula with the oil in a serving bowl, squeeze in the key lime juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Use a grater to spread the parmigiano-reggiano over the top.
